St Edmund's Head pub opened in 1845 with its own brewery. Brewing ceased in 1917 and Greene King closed the pub in 1995. It re-opened in 1999 complete with a unique state of the art brewery housed in the bar area. This new brewery was founded by Richard Eaton-Jones (who also previously helped to set-up St Peters brewery) upon re-opening of this town centre pub. Richard is no longer involved with brewery or pub.

Michael and Judith Shallow took over the business in late 2006. They have fully refurbished the buildings and currently employ Joe Kennedy as a brewer. They no longer close when brewing so visitors may sometimes find Joe brewing, especially on a Monday or Wednesday or Friday.

There are plans for bottling, further off-sales, more seasonal beers and the acquisition of a further pub. Ten outlets are supplied.
